90 Minute Batter Rolls

These are the best rolls I have made in a long time. I made these late last night and have already had two today: one with marmelade this morning and one for lunch as a mini sandwich. These will be awesome for dinner tonight with or without butter.

Ingredients :

  •     3 1/4 cups all-purpose flour, sifted
  •     2 1/4 teaspoons active dry yeast
  •     1 1/4 cups milk
  •     1/2 cup shortening
  •     1/4 cup sugar
  •     1 1/4 teaspoons salt
  •     1 large egg
  •     nonstick cooking spray
  •     1 tablespoon poppy seed


Directions:

  1. Combine 2 cups flour and yeast in mixing bowl.
  2. Heat milk, 1/2 cup shortening, sugar and salt in saucepan just until warm (150ºF to 200ºF), stirring until shortening almost melts.
  3. Add to flour mixture.
  4. Add egg.
  5. Beat with electric mixer at low speed for 30 seconds, scraping bowl.
  6. Beat 3 minutes at high speed. By hand, beat in remaining flour until batter is thoroughly mixed.
  7. Place in large bowl.
  8. Spray top with no-stick cooking spray. Cover with plastic wrap.
  9. Let rise until double, about 1 hour.
  10. Stir down.
  11. Beat thoroughly with wooden spoon.
  12. Let rest 5 minutes.
  13. Spray muffin cups with no-stick cooking spray.
  14. Drop batter by tablespoons into prepared muffin pans, filling half full. Cover. Let rise until double in size, about 30 minutes.
  15. Heat oven to 400ºF.
  16. Spray tops with no-stick cooking spray.
  17. Sprinkle with poppy seeds.
  18. Bake 12 to 15 minutes or until tops are light brown.

Paintpuddles :  Made these rolls for Thanksgiving. Nice recipe, easy and very good. I did spray the tops and added poppy seeds as in the recipe but most of them fell off the rolls when cooled. But over all a nice dinner roll. Thanks for sharing it.

Andi of Longmeadow Farm :  I concur with my fellow reviewers, I needed a quick roll but didn’t want to run to a store, nor have a complicated bread project, so this filled the bill perfectly. I painted the tops of the rolls with some butter on a brush when coming out of the oven, and talk about none left! 

diner524 :  Great rolls!!! So easy and quick for homemade rolls. I made the recipe exactly as written to serve with dinner last night for 4 of us and there isn’t any left.
