How to Make Tangy Broccoli Cabbage Slaw

If you want a way to use up those fat broccoli stalks that you pay for when you buy broccoli, this recipe is for you. If you save the stalks from about two bunches of broccoli, peel them, and grate them you will probably have the correct amount. This recipe uses half grated broccoli and half grated cabbage, so it is an easy way to get your children accustomed to the taste of broccoli slaw. Broccoli and green cabbage are related vegetables, so they blend very well together. To add more nutrition to your family meals, try this recipe.


Things You’ll Need:

    1 ½ cups grated broccoli

    1 ½ cups grated cabbage or coleslaw mix

    2 tablespoons olive oil

    1 tablespoon  vinegar

    ¼ teaspoon or more garlic powder

    ¼ teaspoon or more salt

    ¼ teaspoon or more pepper

    ½ green or red bell pepper

    chili powder

Instructions

  1. Mix 1 ½ cup grated broccoli stalks with 1 ½ cups grated cabbage in a serving bowl. See tips.
  2. Chop ½ green or red bell pepper into small pieces and add to the bowl. Mix well with the broccoli and cabbage.
  3. In a smaller bowl, make the dressing. Combine the 2 tablespoons olive oil, 1 tablespoon  vinegar, garlic powder, salt, and pepper and mix well.
  4. Pour the dressing over the broccoli cabbage slaw and mix thoroughly. Taste the tangy broccoli cabbage slaw and adjust seasonings to your preference. Sprinkle with chili powder. Makes about 6 servings.

Tips & Warnings

Exact proportions of the two main ingredients are not important. You can vary the recipe according to how much grated broccoli you have. You just need three cups total grated broccoli and cabbage.
