Tangy, creamy, and packed with flavor, Tamil recipes Kathirikai Pachadi is the perfect side dish to elevate any South Indian meal!

Ingredients

1/2lb onions (finely chopped)
1/4lb tomato (small pieces)
2 pieces green chili (round pieces)
3 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon urad dal
2 pieces Whole Red chili
1lb Egplant

Directions

Step 1

Wash and cur the eggplant into small cubes

Step 2

Cut the onions into small pieces

Step 3 

cut the green chilis also into round pieces

Step 4

Heat a cooking pan

Step 5

In medium heat pour the oil and add mustard seeds, urad dal , green chili and red whole chili

Step 6

When the mustard pops add oinions and tomato and sitr fry for about 3 minutes

Step 7
Now add the eggplant and stir fry with the rest to mix Add about a cup of water

Step 8
Let it cook for about five minutes with a lid coverd on the pan

Step 9
Once the eggplant is cooked you can turn off the heat and serve for Idli or dosai for morning breakfast
