INGREDIENTS:
4 Eggs
Season with Salt and Black pepper
1/4 tsp Red pepper flakes
1 can Tuna In Olive Oil (140g/4.94 oz), Drained
Chives
1 tbsp Olive oil
1/2 tbsp Butter
2 Garlic cloves
2 Tomatoes
60g / 2 ounce Cheese ( I used Emmental cheese)

INSTRUCTIONS:
Heat butter/ olive oil in a 10" nonstick skillet over medium-low heat. Sauté garlic until soft, about 1 minute. Add tomatoes and fry for 1 minute on each side.
In a bowl vigorously whisk eggs until uniform. Whisk in salt, black pepper, and red pepper flakes. Add drained tuna, chives, and mix until combined.
Pour the mixture over the tomatoes, cover with a lid, and cook for 6 minutes over low heat.
Once the omelette is cooked through, sprinkle cheese on top and serve immediately.

2 cans of tuna
2 eggs
small piece of fresh ginger root
Handful of Parsley
Chives
Zest of 1 lemon
1/2 tsp chili powder or add 1 fresh chili pepper if you have one ;)
Salt (only if tuna unsalted)
black pepper
Oil for frying
Fry over medium heat for 2 minutes on each side

For the Dipping Sauce:
2 tbsp mayonnaise
1 tsp hot sauce
